Evia is famous for its unusual pine honeys.  The bees work symbiotically with another insect to create these delightful amber honeys.  This partner in crime lives within the pine tree and causes the tree to secrete a sweet, sugary sap that they bees collect to make honey.  If trees cried, in Evia the pines would weep sweet tears. 

Pine honey is a woody honey with a sharp, spicy edge to it.  Its stimulating pine aroma stands up well to use in teas and sauces.  Eat it on toast or over yoghurt.  A natural cough suppressant, a spoon full of pine honey before going to sleep helps ensure a good night sleep and soothe away the symptons of a cold.
