Tomato Sauce with Olives

* 1 medium onion, finely chopped 

* 1/2 cup Taste of Crete olive oil

* 2 cloves finely chopped garlic 

* 1/2 kg chopped tomatoes

* 200 grams pitted olives

               salt, pepper, oregano, basil

* 1/2 cup red wine

Prepare the olives: boil them in water for about three minutes.  Drain them and repeat the process.  Finally, pit them.

Brown the onion in olive oil in a pan and add garlic, tomatoes, wine, olives, salt, if needed, pepper, oregano and basil.  Cook on low heat until the sauce thickens.  Use it on spaghetti or on grilled fish.
